Tomato and red capsicum soup
- 1 medium onion, roughly chopped
- 1 garlic, chopped
- 2 red capsicum, chopped
- 12 pieces of cherry tomato, chopped
- 1/2 cup water
- 1 tbsp olive oil
- Salt and pepper
- 1/4 cup coconut milk at the end
- Sauté the onion and garlic till the aroma comes out
- Add capsicum and continue sauteing for 2 min
- Add the tomato
- Add 1/2 cup water
- Cook for 10 min
- Put all in the vitamix and blend.
- Bring back to the pot and add the coconut milk and stir for 2 min.
