Lentil salad with sundried tomato

Ingredients:

  • ½ cup of boiled lentils
  • ¼ cup chopped walnuts
  • Handful of finely chopped spinach
  • 3 tbsp chopped sundried tomato
  • 2 tbsp of green onions (only the green part)

Preparation:

  • Mix all together and add the dressing

Dressing:

  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 1 small garlic crushed
    Salt and pepper.
