Artichoke heart salad

Ingredients:

  • Artichoke in brine or frozen
  • Arugula
  • Salt & pepper to taste
  • Olive oil
  • Lemon juice

Preparation:

  • If using frozen artichoke hearts. Thaw and boil in a pan with some water. Add salt and slice of a lemon to the pot and  boil  the artichokes  until tender.  
  • If using from the brine – check for tenderness if you need to boil them then follow the steps below or else just slice immediately and follow the  method below.
  • Slice them medium thin
  • Place on a serving shallow serving plate and add a handful of arugula , salt and pepper.  Drizzle with olive oil and lemon .
